Beef and Kale Stir Fry

This delicious Beef and Kale Stir Fry is quick and so full of great natural flavours. The ingredients are staples in our kitchen and I can easily whip any dish with these. But today I am going to show you one of my favourite.

 

What ‘s in the recipe

I used gravy beef in this recipe but you can use chunky beef any other stir fry beef.

Onions

Capsicum

Carrots

Celery

Garlic

Tomato Paste

Spices

Oregano

Thyme

Paprika

Tip:

Steam the vegetables together and set aside so they retain flavour.

How to Make it

Marinade the meat with a bit of oil and all the spices and put aside to marinade for 10 mins. After 10 minutes fry the meet until golden brown like show in the picture and then add onions and stir for 2 minutes add a bit of water or stock if it starts to stick. Add your tomato paste and stir in the steamed vegetables. Stir for another minute or 2 and it is ready to serve.

 

Beef and Kale Stir Fry

This is a delicious side or main meal for lunch or dinner

Ingredients
  

  • 300 gr Beef cut into stripes
  • 2 Tbs Olive Oil
  • ½ Tbs Paprika
  • ½ Tbs Oregano
  • ½ Tbs Thyme
  • I Medium Capsicum
  • 1 Medium Onion
  • 2 Medium Carrots
  • 2 sticks Celery
  • 50 ml Stock
  • Salt and Pepper to taste

Instructions
 

  • Mix together all the spices and mix together with the meat and oil to make a marinade and set aside for 10
  • Meanwhile steam all the vegetables together for 3 minutes and set aside
  • After 10 minutes take the marinated meat and stir fry in a non stick fry pan. Simmer the meat with its own juices if you need to until all the juices are are gone. Stir fry the meat until golden brown and add onions cook for 2 minutes and then add tomato paste and cook for another 2 minutes adding stock if you need to.
  • Finally add the steamed veggies and combine together and stir for 2 minutes again. Serve immediately.

Serving Suggestions

  • Quinoa, brown rice, soba noodles roasted sweet potatoes.

Notes

Steaming the veggies retains crunchiness and flavour.
