Cashew Chicken Stir Fry
This Cashew Chicken Sir fry is full of flavour that will blow your mind with awesomeness. It is so delicious I made it twice in 2 weeks. I love chicken and the flavours in this recipe makes it even more delicious.
This a quick and easy meal you will have it on the table before Uber eats arrive at your door. It is so versatile you can use any vegetables you like. The second time I made it with cauliflower I didn’t need to serve with rice then. Nuts a a good protein added to this recipe they assist in making you feel fuller for longer.

How to make Chicken Cashew stir fry
Mix Soy sauce ingredients together and use some of the sauce to marinate the chicken for 10 minutes
Suet the onion and garlic 1 min and stir in the Chicken and stir for 3 minutes
Add the Capsicum and the vegetable. and stir for 2 to 3 minutes
Chicken Cashew Stir Fry
- 500 gr Chicken breast or
- 4 Tbs Sesame Oil
- ¼ Cup Soy Sauce
- ¼ Cup Cooking Sake/Mirin
- 1 Tbs Cornflour
- 1 Medium Capsicum
- 1 Bunch Broccolini
- Salt and Pepper to taste
- ⅓ Cup Cashew nuts
- ¼ Cup Water
- ½ Onion
- 2 Cloves Garlic
- Mix the Sauce soy sauce, sesame oil, mirin and cornflour together and use ¾ of the sauce to marinate the chicken for 10 minutes.
- Drizzle oil into the sauce pan and saute onions and garlic until soft. Add the chicken and mix together for 3 minute.
- Add the sauce and water and cook for 2 minutes until the sauce thickens.
- Add the crushed Cashews and stir through. Remove from heat and serve immediately with brown rice or cauliflower rice.
