Easy Pumpkin Soup

A warm bowl of pumpkin soup is food for the soul. It is such a humble soup yet so nourishing. Here is my easy to follow recipe for you to make at home. I usually make a big batch to freeze to eat on lazy days. It can also be served hot or cold and if you don’t have cream just add butter it adds extra richness.
Easy Pumpkin Soup

Ingredients
- 500 Gr Pumpkin
- 500 Gr Butternut
- 200 Gr Sweet potato
- 1 Medium Onion
- 2 Cloves Garlic
- Lemon to serve
- 600 ml Vegetable Stock
Instructions
- Prepare all the ingredient and put them is a saucepan with vegetable broth and bring to boil.
- Let it simmer for 20 minutes or until cooked. Put on the side to cool and blend uni
- Serve with a squeeze of lime or cream of your choice.
