These succulent baked chicken bites are so delicious and easy to make and kids will love them.
Here is what you will need:

- 500 Gr Breast Chicken
- 2 Small Shallots
- ½ Cup Parsley (preferably fresh)
- 3 Medium Eggs
- 1 Tsp chilli paste
- 3 Cloves Garlic
- 1 Cup Quality bread crumbs
- Salt to taste
- 3 Tbsp Parmesan Cheese (optional)

Cut the chicken into bite sizes or stripes. In a bowl mix together eggs, parsley, salt and chilli paste.Mix in chicken and let it rest for 10 minutes.

In a blender or food processor pulse shallots and garlic to a smooth consistency and add it to the chicken mixture. Combine the mixture together and start coating the chicken with Parmesan breadcrumbs until well covered. Double dip for extra flavour

Serve Immediately with favourite side dish salad, rice, finger food.
You can add Parmesan cheese in the bread crumbs for added taste.
You can use chilli flakes instead of chilli paste.
Panko bread crumbs will do but not the best for this recipe because of the Parmesan cheese you can swap if you like.
Marinating the chicken in the eggs makes the chicken easy to coat. The longer it marinates the better.
You can use vegan eggs
Serve immediately.
Keep in a tight container to keep them most and crisp.
