Homemade Tomato Sauce
Tomato sauce is one of the most commonly used ingredient in many cuisines. I use tomatoes in most of the times in my recipes as they add great flavour to dishes. Tomatoes are abundant in season and I always find ways to utilise this great ancient ingredient. I never buy jar sauces from the supermarket.
What you will need
2 Kg Ripe tomatoes
5 Garlic Cloves (optional)
1 Large Onion/Optional
A handful Fresh Basil/Optional
1 Tsp Salt
Water 2 Litres
I like to core my tomatoes I learnt this from an Italian friend of mine. She told me traditionally this type of sauces are made without the seed and the flesh around the seed. It makes a good sauce then.
How to make the sauce
Firstly, peel off the tomato skin by pouring hot water on the tomatoes (carefully). Prepare all the ingredients by thinly slicing the onions and tomatoes into chucks them into chunks after deseeding them. Let them stand for a few minutes and then peep the skin off before cooking with the rest of the ingredients. On low heat put all the ingredients in a saucepan and cook for an hour with 500 ml of filtered water at a time or use this homemade stock. After an hour season with salt and let it cool and spoon in a prepared jar. If you want a smooth sauce pulse in a food processor for 10 sec.
Use this in Spaghetti Bolognese, stews, and many other recipes.
