Homemade Vegetable Stock
Making vegetable stock at home is so easy. The most easier part is that it is a one pot recipe requiring minimal preparation. (yeah I love those recipes). So I made this recipe with left over vegetables from our weekly shopping and it is always exciting when I make it because it is always different vegetables.
How to make make this vegetable stock/broth
Saute all the vegetables in a saucepan until soft and then add water. Simmer for 1 hr or more and drain the liquid for storage up to 5 days in the fridge. What I had in abundance in this recipe was huge amount of celery leaves so I used that for greens. I also added tomato past and nutritional yeast for depth of flavour and parsley.

Home made Vegetable Stock
- Celery/celery leaves
- Tomato Paste
- Nutritional Yeast
- Salt and pepper
- Olive Oil
- Saute all the available vegetables together until they are soft and add filtered water and nutritional yeast and bring to boil. Once it starts boiling reduce heat and simmer for I hr adding more water as needed.
- Add spices such as dried thyme, oregano and bay leaf for extra flavour.
