½ Cup Black Beans Cooked
½ Red Onion sliced
2 Cups sweet potato diced/cooked
1 Cup Kale chopped
2 Tbsp Olive oil
50 ml Water if needed
salt and pepper

      Cook beans and sweet potato prior to making this recipe.

      Preparation

      Chop your kale and cut onions in slices. In a food processor mix cooked and skinned sweet potatoes and cooked black beans add the rest of the ingredients.

      Pulse the mixture for 2 to 3 minutes to a grainy texture. You don't want a smooth consistency leave a bit of texture to the mixture. If too thick or dry add a bit of water/olive oil to soften. Shape into round burger shapes using your hands and lay on a baking tray. Bake for 20-25 on 180 degrees Celsius or until golden brown. Serve with your favourite sauce, make a lettuce wrap burger with avocado and cucumber, break into small pieces and throw in your favourite salad.
