Adjust Servings:
2 Mediium Carrots Cut into strips
1 Small Capsicum Cut into stips
1 Packet Sweet potato Noodle Cook to packet instrutions
200g Chuck Beef Cut into strips
7ml Bone Broth You can use Veggie stock or bouillon 4 tbsp make. Remember to balance the seasoning as stock can be salty.
1 Tbsp Tomato Paste
½ Cup Crushed tomatoes
1 Medium Onion Sliced
2 Garlic Cloves Crushed
1 Cup Broccoli cut into small pieces
1 Cup Kale roughly chopped
Salt and Pepper To taste
2 Tbsp Olive oil

Beef Noodle Soup


      This Noodle Soup is so tasty and delicious. It is the ultimate comfort soup of all time. The crunchy vegetables and the depth of flavour from the bone broth makes a real comfort meal.

      Beef Noodle Soup is so healthy, tasty and warming I think you would love to make it again. I use Udon, sweet potato glass noodles, brown rice noodles. I love soups like this as they are loaded with good nutrients. the trick is to cook the noodles in the broth it bring out the best of the rice noodles.






      Sear the meat. It's important to brown the beef first. As a result, it adds an unbelievable caramel essence and nuttiness to the dish. Plus, it adds a depth of flavour to the soup that you can not create any other way.


      In a sauce pan stir fry beef strips in olive oil until browning for 5-10 minutes, keep stirring until the liquid runs out and brown the meat, add the onions and the garlic and keep stirring until flavourful about 1 minute. Add the paste, crushed tomatoes, carrots to the meat and keep stirring until combined for about 4 minutes adding beef broth/stock as needed until the tomatoes have cooked down and the sauce is thick. When the sauce has reduced down stir in the noodles and rest of the beef bone broth cook on low heat for 10 minutes, In the meantime steam the broccoli, capsicum and the kale for about 3 minutes and set aside.


      When the liquid has reduced and flavour has become intense. Add the rest of steamed vegetables , stir to combine and let it simmer for another 1 minute. Serve enjoy.
