Broccoli rice is a healthy fiber-rich side dish when you’re looking for a grain and gluten-free alternative. Rice alternatives have become popular to add to meals because they are easy to prepare and neutral in flavour.

    Broccoli Rice

    Steps

    1
    Done

*This broccoli rice can be made 3 ways. 1. You can use chopping knife to chop broccoli into small florets. 2. You can use a blender it might take longer as the space is limited. 3. Use a food processor quick and easy. When using food processor cut into small florets and pulse for 2-3 minutes or until a rice consistency is reached.
*When that is done put the rice in a large bowl and pour in some hot water. Cover and leave for 5 minutes. After 5 minutes drain and season with salt and pepper.
*Add the back beans, wild rice, lemon juice and mix together to combine. You can use steaming system as well just make sure the rice does not over cook.
