Carrot and butternut Soup


    This carrot and butternut squash soup is so easy, delicious packed with nutrients it is a healthy way of eating soup with a great depth of flavour.

    Carrot and butternut Soup is delicious. I love the magic of flavours these ingredients have when it comes to making soup. Simple yet delicious and nutritious.



    Put all the vegetables on an oven tray. Season with salt and coriander and roast in the oven until they start to turn brown for 20 or more minutes on 180 degrees Celsius. This helps the vegetables release some of the sweetness which helps with the depth of flavour.


    Once the vegetable have roasted put in a saucepan on the stove top. Add a tsp of butter and add the 3 Cups Vegetable stock of your choice. Use a mild vegetable stock that is not going to overpower the delicious soup. Simmer for 10 minutes and blend to a soup consistency. Serve with steamed rice, sprouted rye bread, Quinoa.
