Ingredients

Adjust Servings:
Medium Cauliflower medium head chopped
4 Eggs Boiled, shelled and cut in halves
1 Tbsp Curry Powder or more if required
250 ml Coconut Milk
1/2 Cup Crushed tomatoes
1 Medium Onions Diced
3 Medium Garlic Cloves crushed and diced
350ml Vegetable stock or water if preferred

Cauliflower and Egg Curry

    Quick and Easy Meal

    In a large Saucepan saute onion until fragrant in coconut oil about 2 Tbsp if solid. Add garlic and continue to stir until the onions are translucent.

    Add the spices after a minute and stir until the spices are fragrant for 30-45 secs. Add the tomatoes immediately stir and cover for 2 minutes. Add 200 ml of water or vegetable stock and simmer for 5 minutes. Stir in the cauliflower and simmer until it is tender.

    When the cauliflower is just getting tender add the boiled shelled eggs and simmer for another 2 minutes. Lastly add coconut milk stir and simmer for 2 minutes season to taste. Serve with brown rice or as is.
