Medium Cauliflower medium head chopped
4 Eggs Boiled and cut in halves
¼ Tsp Ground Cumin
¼ Tsp Garam Masala
½ Tsp Curry Powder
250 ml Coconut Milk
3 Medium Crushed tomatoes
1 Medium Onions Diced
3 Medium Garlic Cloves crushed and diced

Cauliflower and Egg Curry


    Cauliflower and egg curry is a really versatile mix. The meal is quick and easy to make. It is also very nutritious meal if you eating mainly plant based

    Quick and Easy Meal



    In a large Sauce pan saute onion in coconut oil depending on the state of the oil I use 2 Tbsp and add garlic continues to stir until fragrant.


    Add the spices after 2 minutes and stir until the spices are fragrant for 30-45 secs. Add the tomatoes immediately stir and cover for 2 minutes. Add 100 ml of water and simmer for 5 minutes. Stir in the cauliflower and simmer until it is tender add more water as need 50 ml.


    When the cauliflower is cooked add the boiled and shelled eggs and simmer for another 2 minutes. Lastly add coconut milk stir and simmer for 1 minutes season to taste. Serve with brown rice or as is.
