¼ Cup Walnuts Crushed optinal
2 Cups Flaked Coconut
¼ Cup Chia Seeds
¼ Cup Flax meal
¼ Cup Cacao Nibs
½ Cup Pumpkin seeds
2 handful Cranberries
1 handful Black currants
1 Tbsp Coconut oil

Crunchy Healthy Granola


    This Crunchy Healthy Granola is so versatile. It is plant based and so easy to make and stores very well in a tight closed jar for freshness. An easy go to grab and go healthy meal for anytime.

    A Crunchy Healthy Granola that is not too sweet and does not have to have oats.




    Mix together all the ingredients in a bowl or onto the baking tray except the chia seeds and the flax meal.


    In a preheated oven @ 200ºC spread the ingredients evenly on a baking tray and roast for 10 or more minutes or until the coconut flakes starts to brown just a little bit. This will depend on how hot your oven is. Add the chia seeds and the flax meal and continue roasting for another minute..


    Stove Top Option

    This is an optional way to roast this granola on the stove top. I prefer this method as I have total control of roasting and tossing the granola to exactly my preferred texture and colour. I have also total control of the heat which is quite important as the ingredients tend to burn very quickly. So the same first step mix all ingredients in a bowl except the chia seeds and the flax meal. In a large fry pan toss all the ingredients for 6 or more minutes making sure they do not burn you have to continually stir until done. Don't forget to add the chia seeds and flax meal towards the end. Let it cool before storing. Serve with almond milk and banana or fresh berries.
