4 handfuls Spinach About 6 cups
400 gr Feta Cheese
2 Large sweet potato 1 for the base 1 for mashing with spinach
1 Tbsp Butter
1 Medium Onions Finely Chopped
1 Eggs
2 Tsp Vegetable stock Powdered or cubes
1 Tsp Oregano
Salt and Pepper To taste
Pine nuts 1 handful
1 Tsp Thyme

Crust-less Spinach and Feta Pie

    Step 1. Cut the spinach using a knife or put in food processor. Blanch the spinach/silver beet for 5 minutes. Blanching is putting vegetables in hot water for 5 minutes and running them under cold water to stop the cooking. Preparing spinach this way will make sure it will not drain water when baking. It works perfectly. Just make sure you hand squeeze water from the spinach before and after cutting it. Preheat the oven @200º


    Step 2. Prepare 1 large sweet potatoes by cutting it in small pieces and cook until soft for about 15 minutes and set aside.
    Step 3 Dice the onions and set aside.
    Step 4. Mix together the spinach, onions, feta cheese, cooked sweet potato, egg, butter, spices and powdered/ dry vegetable stock, ½ tsp salt to taste.. You can put more eggs if you want it really "eggy'" otherwise 1 is enough. If you cant have eggs I suggest you swap with ¼ cup chickpea flour it works fine. Just mix it thoroughly with the rest of the ingredients.


    Step 5. Thinly slice raw sweet potato and begin to lay in the baking dish as shown in the picture. Cover as many gaps as you can, you can have a double layer if you like
    Step 6. Bring in the spinach mix and lay on top of the raw sweet potato. Smooth it with back of a fork and sprinkle pine nuts on top of the set pie. Make sure all the gaps are covered. Bake in the oven for 25 minutes or until golden brown if you prefer. @180º


    When cooked take out of the oven and let it cool down. Serve with a salad or by itself.

    Mmmm, Angie, this looks and sounds delicious. And the way you describe it, I think even I could make it. Still, I will give this recipe to my cook (aka hubby) as well, because he is always looking for new recipes. Especially if there is sweet potatoe involved. We eat that a lot. 🙂

    On the picture it looks like you used pine nuts, but I don’t see them in your ingredients list, so I am wondering what I see? I guess, pine nuts will go well with this recipe, won’t they.

    This recipe sounds delicious actually. I love trying new things and experimenting with food. I have to admit, I’ve never made this dish, but my husband and I both love spinach and I could definitely see making this for us.
