Ingredients

Adjust Servings:
1 cup Green/brown Lentils cooked and seasoned with butter , black pepper, turmeric
2 Medium Capsicum red and yellow diced
2 Cups Lettuce finely chopped
1 cup Cherry Tomatoes quartered
small bunch Garlic Chives nicely chopped
1 Medium Red Onion diced
1 Medium Cucumber Cored and diced
Dressing
¼ cup Lemon Juice
2 Tbsp Avocado
4 Tbsp Apple Cider Vinegar
Salt and Pepper to taste

Delicious Lentil Salad

    I am so obsessed with this delicious lentil salad. It is quite filling, has all the good nutrients your body needs to thrive. It is a nourishing easy delicious meal for the whole family.

    Firstly, cook the lentils in a medium saucepan for 10-12 minutes drain, season with butter, turmeric and set aside to cool. In a large bowl mix together all the vegetable ingredients. When the lentils have cooled down mix together with the salad ingredients.

    Prepare the dressing by adding all the ingredients together in a blender or you can use the back of the fork to smash the avocado into the liquid mixture until a consistency mixture is reached. Avocado lumps are fine if you prefer. Pour the dressing on the the salad mix and stir to combine together. Stir for at least a minute so that all the ingredients absorb the dressing and season more as required. Serve and enjoy.
    You can serve with Nachos
    As a side meal

    Love this!

    I’ve been trying out the vegan diet and I am looking to expand my plant based recipe knowledge. This seem like a very fun, healthy and filling dish to make!

    I like dishes that I can do once and store for a couple of days. Saves me the energy and I can definitely see myself making this.

    Love how easy you made your site to be, with easy change of serving sizes too. Can’t wait to try this and share with my family.
