Ingredients

Adjust Servings:
250g Organic Firm Tofu cut into bitesize cubes
2 Tsp ginger grated
3 Cloves Garlic Cloves finely chopped
1/4 Cup Tamari
1 Large Carrots Cut into matchsticks
1 Small Zuchinni thinly cut
1 medium Capsicum thinly cut
1/2 Cup Mushrooms sliced/swiss brown
2 Cups Green Cabbage chopped
1 small Spring Onions roots taken off and chopped
Salt and Pepper to taste. Remember tamari is salty.

Ginger Tofu Stirfry

    In a large saucepan drizzle some olive oil and add some grated garlic and ginger stirfry for 1 minutes on medium heat and then add the Tofu. Stir to mix and pour 1/2 of the tamari on the mixture then keep stirring to mix together.

    Add the carrots and zucchini stir to mix with the tofu mix for 2 minutes. Add in the mushroom and continue to stir.

    Lastly add the capsicum and the cabbage and the rest of the tamari and stir to mix for another 2-3 minutes. I like to leave this a bit crunchy. When cooked add the spring onions, turn the heat off cover and let this stand for a a few minutes. Serve hot with rice or as is.
