Ingredients

2 large Potatoes
1/2 Cup Green lentils
1 Large handful Kale
1 Small head Broccoli
1 Small Onions
3 Cloves Garlic
800ml Vegetable Stock
2 Tsp Ginger grated
40ml Lemon Juice

Green Dreamy Soup

    Green Dreamy Soup. You can easily fall into a trance while having this soup lol. But seriously it is that good!

    Roughly cut the potatoes and put on a lined baking tray. Drizzle some olive oil, salt and pepper and bake in the oven for 20 minutes @180°c

    Meanwhile, chop the broccoli into small florets and the kale into small chunks and set aside. In a soup saucepan drizzle some olive oil and stir fry onions and garlic. When soft and translucent add the green lentils and the vegetable stock (leave some for later). Cover and cook for 5 minutes.

    Add the chopped broccoli to the lentil mix and cook until soft about 5-8 minutes. Lastly but not least add the baked potatoes and the kale cover and cook for another 5 minutes to combine flavours.

    When that is done turn the heat off. Let this cool down a bit before blending. Add the ginger and the lemon and blend using your soup blender add some more liquid if needed, I add hot water. I also use the sick blender. Serve hot with bread or as it is.
