Ingredients

3 handfuls Kale massaged with oil and salt
1 Cup Cherry Tomatoes
250g Feta Cheese use crumble feta
1 Cup Quinoa cooked and drained
half of small Red Onion thinly sliced optional
pinch Salt and Pepper to taste

Kale and Feta Salad

    Kale and Feta salad is my go-to salad. It is packed with nutrients. It is so satisfying you don’t feel hungry after eating this meal. Kale is known to have a lot of antioxidants as well as quinoa. I know you will love this salad as it is such a life saver.

    First cook the quinoa on medium heat for 5-8 minutes. Drain and set aside. Chop the kale randomly and put it in a bowl. Now you need to tenderize the kale by giving it a bit of a massage with olive oil and a pinch of salt.

    Here is how you do it. Drizzle I tbsp of oil on the kale and salt then begin to massage until soft.

    When soft enough add the halved tomatoes, crumbled feta, and red onions and mix well together. Dress with one of my homemade salad dressings found here https://myfoodrelations.com/easy-homemade-salad-dressing/ Serve as a side dish or enjoy by itself.
