1 Tbsp Miso Paste
1 Medium Onions Diced
2 Cup Spinach Roughly chopped
1 Cup Brown Rice
Salt and Pepper To taste
850 ml Water 500 ml for crock pot

Miso Mushroom Risotto

The texture and flavours of this dish are so delicious. It is the ultimate savoury comfort food that is good for you.





      Miso is a soybean paste/seasoning used by Japanese in their everyday cooking. It has really good flavour for many dishes. I have combined miso and mushroom and the dish as a depth of flavour to die for. Miso is very good for your gut as it is a fermented food



      I made this recipe in the crock pot it only 10 minutes to cook. I have based the recipe on the stove top. But if you are using a crock pot follow the same process and cook for 10 minutes. I love my crock pot the best kitchen gadget I have ever found useful almost on a daily basis.

      In a deep saucepan fry onion in olive oil until fragrant add mushroom and stir to combine.


      Add the spinach after 2 minutes of stirring the mushroom and onion mix. Mix together to combine.


      Add the rice and mix the miso paste in water and then add to the rice. Cover and cook for 30 mins until cooked. If using the Crock post cover and cook for 10 minutes. 500 ml of water for crock pot. 750 ml for stove top and add more as needed or until cooked. Serve and enjoy.
