Adjust Servings:
1½ cups Swiss Brown Mushrooms Any mushrooms will do.
2 handfuls Kale Spinach or Chard will do. Well chopped
1 Small bunch Garlic Chives chopped
2 Stalks Spring Onions
1 handful Parsely
2 Medium Potatoes
1 Tbsp Thyme
2 Tbsp Cream cheese Optional

Mushroom Pie


    Mushroom pies are my favourite meal. I find any mushroom dish easy to make as mushrooms do not require much seasoning.

    This Mushroom pies is great for any time of the day. It is packed with nutrients and can be frozen for future meal if you so wish. Why I love this recipe, is because it easy to make and you will have delicious dinner in no time.




    Prepare your baking tins and defrost the pastry and set aside. In a medium sauce pan sauté some spring onions and thyme for 3 minutes before adding mushrooms and stir for another 4 minutes.


    Add in the kale and mix to combine for 4 minutes. Spoon in some cream cheese and stir until melted and mixed with the rest of the ingredients for 2 minutes. Add some water (50ml) to loosen the mix up a bit. Thinly slice potatoes and leave in a bowl of salted water so they do not brown. When all is done cut and size the pastry into individual pie dish or whatever dish you are using. Fill in with the mushroom mixture and top with the potatoes layering them on top of each other until the required amount. Glaze the top of potatoes with some olive oil or butter. Bake in the oven for 20-25 minutes or until potatoes are cooked. Serve and enjoy with a salad.
