Ingredients

Adjust Servings:
350g Mushrooms Swiss brown or a mix
1 Medium Onions Diced
1 Tbsp Thyme You can use dried fresh is better
1 glove garlic Crushed
2-3 Medium Potatoes Do not skin
500ml Vegetable stock
¼ Tsp Salt and Pepper As prefered

Mushroom Thyme Soup

    Boil the potatoes until cooked for 7-10 minutes and set aside. Sauté the onions and the garlic for 2 minutes in 3 tbsp of olive oil. When translucent add the mushrooms and the thyme and stir until the mushrooms have wilted down. Mushrooms will release lots of liquid and that is ok.

    Add the stock liquid and potatoes, cover and simmer for 5 minutes to blend the flavours. When done put in a blender and blitz 5 seconds or until smooth. Serve with a slice crusty bread and enjoy.
