Ingredients

Adjust Servings:
1/2 Cup Pasta spirals/small shells
1/2 cup Red beans precooked
2 small Carrots
2 handfuls Kale nicely chopped
1 Small Zuccinni sliced
2 Handfuls Napa Cabbage nicely chopped
1 Tspn Italian Seasoning
1/2 Cup Diced Tomatoes crushed will do
1 small Onion finely diced
750 ml Vegetable Stock you can dissolve stock cubes in hot water

    In a dutch oven drizzle some olive oil and add the onions and the seasoning stir until fragrant on medium heat. Add some tomatoes and 1/2 of the stock stock and cover and simmer for 5-8 minutes.

    Add the pasta, pre cooked red beans, carrots and zucchini the rest of the stock and cook for 10 minutes. Add more liquid if needed. Gently add the cabbage and kale and stir to mix until just soft and sommer for another 5 minutes.

    Let it stand for a few 2-5 minutes. Serve hot and enjoy.
