¼ cup Olive oil

Directions
Pasta and roasted vegetables is my new favourite recipe. It is so simple yet delicious. Roasted vegetables brings a lot depth of flavour and it is such a good combo with the pasta. You can use up any vegetables you may have. Very good for meal preps as it keeps for 2 to 3 days in the fridge.

Firstly you will need your pastle and mortar grinding tool. Combine garlic, thyme, rosemary and 3 tbsp of olive oil and crush the ingredients together in your mortar for 2-3 minutes and set aside. Cut the carrots, zucchini and capsicums into medium sticks and put in a baking tray. |
