Adjust Servings:
1 Cup Porcini Mushrooms Before soaking/ after soaking and chopping about ½ a cup
1 small Onions Sliced
2 Cloves Garlic Cloves grated
100ml Vegetable stock
3 Sprigs/1 tsp Thyme
Salt and Pepper to taste
1 Large Portobello Mushrooms

Porcini Mushroom Gravy


    I do love gravy but I prefer making my own the reason for this recipe instead of the packaged one. This clean and healthy

    Porcini Mushroom gravy is one of my favourite things to make. It is clean and healthy so I do satisfy my heart by eating extra. I love the flavours of porcini mushroom with the onions and thyme. It is so delicious and luxurious will want to make it all the time .





    In a small bowl soak the porcini mushrooms in hot water (about a cup) for 10 minutes, drain and keep the soaking liquid as it is full of flavour. In the mean time drizzle some olive oil in a medium sauce pan then sauté onions, garlic and thyme over medium heat until fragrant and browning. Stir in the fresh and the porcini mushrooms and cook until reduced.


    When all is cooked down add about 50ml vegetable stock, 50ml of the soaking liquid depending on how thick you want the gravy and let it simmer for 5 minutes. Pu the mushroom relish in a blender and pulse for 5- 10 seconds or until smooth. You can leave mushroom chunks if you prefer by leaving some before blending and adding them back after blending.
    Notes: You can add arrow root flour /cornflour to thicken.
    The soaking liquid will help the gravy to darken you can add 2 tablespoon of tamari if not dark enough. Just remember tamari contains extra salt.

    Just the look of it makes you drool, I like the simplicity of it and ease of preparation.
    Personally I like garlic, onions and on top of it mushrooms. So your recipe would be a perfect combination, I can’t wait to try this one and let my wife taste it. Something new to brag about that I learned.
