1 Cup Quinoa
2 Medium Carrots Diced
1 Cup Green beans Diced
1 Cup Firm Tofu
1 Medium Onions Diced
3 Cloves garlic Fined chopped
1 Small Capsicum Thinly sliced Optional
½ Cup Celery
2 Tbsp Olive oil

Quinoa and Avocado


    Quinoa is a versatile food which you can eat with about anything from eggs to curries, salads and stir fries. This meal is easy to make ahead and keeps in the fridge very well for a few days.

    Quinoa is a grain that originated from South America it is very nutritious and very easy to cook making it an easy go to quick healthy meal.




    Prepare Quinoa by boiling it for 6 minutes in hot salt water. When the grains start to pop it is cooked, drain and set aside.


    In a pan saute onions and garlic together for 2 minutes. Add the the celery, carrots and green beans and stir to mix together add the coco aminos/soy sauce, white wine vinegar and keep stirring until vegetables are nearly cooked and set aside to rest for 5 minute.


    Take the drained quinoa and add to the vegetables. Mix together until well combined. Serve with avocado, capsicum, Tofu or your favourite lean meat.
