Ingredients

1/2 Cup Quinoa Red /black or white
1/2 Cup Black Beans Cooked/organic tinned
Capsicum finely diced
1 Large Tomatoes deseeded and finely diced
small Red Onion finely diced
Seasoning
1 Teaspoon Paprika
1/2 Teaspoon Ground Cumin
1/2 Teaspoon Oregano
1/2 Teaspoon Onion powder
Pinch chilli flakes more if preferred
1/4 Teaspoon Black Pepper

Quinoa and Black Beans

    In a medium saucepan bring to boil 2 cups of water with 1/4 tsp salt. Cook the quinoa the over medium heat for 8-10 minutes drain and set aside. Cook the beans in the pressure cooker for 15 minutes or use drained tinned beans.

    In a small bowl mix together all the herbs and stir to combine.

    Mix the cooked quinoa and the beans together. Take the prepared vegetables and combine with the bean mix. Season with the herb mix and serve warm.
