Red Kidney beans is also my favourite.  I have also developed a sauce that does not include tomatoes, and I have been using it in most of my dishes lately. They are o satisfying and yummy and full of nutrients. I make bean dishes in my house 2 to 3 times a week. Some of the dishes I make never make it here. I am sharing this dish as it is the ultimate nutrient dense dish I live on. It is the greens and the legumes so good for you.

Cook the beans in a Instant pot for about 10 minutes depends on the brand some take longer than others or use the tinned beans. Place the spices, coco amino, veggie stock, onions, 3 slices of the cooked sweet potato and garlic in a blender and blend for about 5 seconds or until a smooth consistency is achieved. Prepare a sauce pan and pour the sweet potato mix in the sauce pan.

Cook on medium heat until thick for 15 minutes or more for increased taste intensity. Reduce to low heat and add the beans and cook for another 5 minutes until all is mixed together. In the meantime stir fry the cabbage in olive oil (2tbsp) with garlic and coco aminos for 2 minutes do the same with the rainbow chard. Begin to assemble as shown in the picture or however you want to serve. Enjoy.
