¾ Cup Green/brown Lentils Cooked
1 Cup Brown Rice Cooked
2 Large Onions
1 Tbsp Ground Cumin
100 ml Vegetable stock Can dissolve cube in 100ml of water
1Tbsp Cumin Seeds

Rice and Lentils (Caramelised Onions) Mujadara


      This rice and lentils dish has become a staple in our household. It is so full of flavour and it tastes so delicious. It is originally a Middle Eastern dish cooked in many parts of that world and they all cook it differently. This version I am going to share with you I found it simple to do it that way. This is complete protein dish suitable for vegans, vegetarians and non vegetarians alike.

      Caramelised Onions Lentils and Rice.  Simple and easy to make. Vegan, Non Vegetarian, Vegetarian Suitable.



      Prepare Lentils and rice and set aside. Lentils cook for about 10 minutes and basimati brown rice about 30 minutes or follow package directions. Use Basimati Brown rice or any other brown rice.


      In a sauce pan stir fry onions in olive oil for 2 minutes and then add the spices stir to combine. When soft and caramelised add the cooked lentils and cooked rice and stir together.


      Add in the stock and stir together then take off the heat and let it rest for 5 minutes before serving. Do not wait until it is cold serve warm or hot. Serve with Greek yogurt and cucumber. Garnish with grated carrots and coriander.
