Ingredients

Adjust Servings:
Medium head Cauliflower Roughly chopped
Small size Butternut skinned and cut into cubes
Small White onion Cut into large chunks
1 medium Capsicum/Pepper Chopped into large pieces
1/2 Tsp Thyme
1/2 Tsp Cumin
3 Cloves Garlic grated or crushed
750ml Vegetable Stock
1/4 Tsp Curry powder
1/4 Cup Green lentils or more if preferred
4 Tbsp Coconut cream organic coconut cream not milk

    Roast Cauliflower and Butternut Soup is a healthy, nutritious tasty soup the whole family will love.

    Bring the cauliflower on a baking tray, drizzle olive oil, sprinkle some thyme and cumin on top and pop in the oven. Mix the butternut and capsicum/peppers on a baking tray and pop in the oven same time with the cauliflower for about 15 minutes. @180°C.

    In a large soup pot make a broth by bringing the vegetable stock, garlic and the curry powder to simmer on medium heat. When the vegetables are done roasting combine with the broth and simmer to 5 more minutes to combine flavours.

    Turn off the heat add the coconut cream mix together thoroughly and season well. Let this cool down before blending. Use a food processor or stick blender to blend the soup together. Serve with bread or enjoy as it is.
