Adjust Servings:
1 cup Red lentils Cooked
2 Medium size sweet potato Split in the middle and baked. See method instruction
½ Cup Crushed tomatoes
4 Tbsp Olive oil
2 Cloves Garlic Cloves
2 Handfuls Kale Chopped. Any type of kale will do even collards as long as you shred them really fine
1 Medium Onions Bulb or spring onions
½ Tsp Paprika
¼ Tsp Ground Cumin
¼ Tsp Ground Coriander
½ Tsp Turmeric

Roast Sweet Potato and Lentil Boats


    Lentils are quite versatile you can enjoy them on almost anything including rice and sweet potato in salad and in stews.

    Sweet potato and lentil go together very well. They both healthy and full of nutrients



    Cook lentils 1 cup of lentils in 2 cups of water on medium heat for about 10mins and set aside. Split the sweet potatoes in half and bake in the oven for 20 mins. In the meantime, sauté onions and garlic in olive oil for about 2 minutes add the cumin paprika, coriander and turmeric and stair for 30 seconds or until fragrant, add in the kale and keep stirring for 2 mins to mix.


    Add the cooked lentils on to the tomato and kale sauce and cook for 5 mins until well combined. Prepare your roast sweet potato by seasoning it first with salt and pepper and begin to load the lentil relish on top of the sweet potato and garnish with spring onions and garlic.
