Ingredients

4 large Tomatoes Fresh/ cut in halves
2 Cups Butternut/Squash Cut in cubes
2 Tbsp Olive oil
½ Tsp Oregano
Salt and Pepper To taste
700 ml Vegetable stock

Roast Tomato and Butternut Soup

This tomato butternut soup is so versatile you can have it as it is or use it in pasta bakes, risottos, slow cook recipes as a base sauce. I have just shared with my secret recipe that makes almost any dish delicious.

Prepare tomatoes by cutting them into halves. Peel the butternut and cut into small cubes. In separate oven trays lay the vegetables with spices and roast in the oven 15 minutes for tomatoes 20 minutes for butternut or until soft.

In a food processor add the stock and add the vegetable from the oven and pulse for 2 minutes or until smooth. Return the soup to the stove in a sauce pan and cook for 20 minutes. Serve immediately with bread rolls
