Ingredients

1 small Butternut/Squash peeled and diced
250g Spelt Pasta Cooked and drained
Medium Onion sliced
½ Tsp Thyme
½Tsp Oregano
½ Tsp Turmeric
2 Cloves Garlic Cloves crushed
1-2 Cubes Vegetable stock Dissolve in 750ml You can use preferable stock
1 Cup Chard 1 handful
Dash Salt and Pepper

    Roasted Butternut Pasta Sauce is an alternative to the traditional pasta sauces we all know and love. I fell in love with it when my daughter made this sauce for dinner. I love that you eat pasta without much guilty not sure why haha!

    Cook the pasta according to package direction drain and keep the excess pasta liquid and set aside. In a large saucepan fry some onions, thyme and garlic until fragrant. Add the butternut and continue to stir until the butternut is coated with spices. Chop the chard finely and set aside.

    In the meantime add the stock and bring the mixture to boil for 15-20 minutes or until the butternut is soft enough. When cooked put the mixture into a blender and blend together until smooth. Add the left over pasta liquid if you need to. When finished pour the butternut sauce into the pasta and put on low heat as you stir to mix. When all is mixed add in the chard and cook for another minute until wilted. Turn off the heat serve and enjoy with a salad.
