1 Cup Crushed tomatoes 1 Tin
1 Medium Onions Diced
1 Medium Capsicum Diced
2-4 Eggs Raw
1 Tsp Ground Cumin
4 Garlic Cloves crushed
4 Tbsp Olive oil

      Shakshuka is a Tunisian dish now popular in middle eastern countries such as Israel. The dish is originally made with tomato base sauce, chillies and boiled eggs. It is an easy meal to feed a group of people without stressing, that sounds like my kinda of meal. It is so tasty and delicious and nutritious. It is gluten free, vegetarian, vegan and so easy to make.

      In olive oil fry onions, red capsicum, and garlic until tender and fragrant. Add the spice and stir for 3 minutes altogether.

      Add the diced tomatoes or canned and mix to combine. Add some water about 100 ml and let it simmer for 5 minutes. Add the beans to the tomato sauce and cook for 10 minutes adding water occasionally if needed.

      When the bean sauce is cooked drop in the eggs and let this simmer for another 2 minutes or just when the eggs are poached. Serve with flat bread, brown rice, steamed veggies or any favourite bread. Enjoy
