1 Packet Soba noodles
1 Large Carrots
Small bunch Garlic Chives this is optional
3-4 Spring Onions depending on size
2Tbsp ginger grated
2 Small gloves garlic minced
2-3 Handfuls Purple Cabbage purple or white will do
Small bunch Parsely
Sesame Dressing
½ Cup Coco aminos
2 Tbsp Peanut butter
2 Tbsp Sesame Oil
2 Tbsp Lime juice
3 Tbsp White wine vinegar

Soba Noodles and Cabbage Slaw


    This is a healthy Asian Slaw make with cabbage, carrots and soba noodles tossed in peanut sesame sauce.

    Cabbage slaw is one of my favourite foods in the world. I love how it is  crunchy and the cabbage is so so good for you. this recipe serves two





    Cook the soba noodles in a large pot of water according to package directions. Drain and rinse with cold water before returning to pot. I used half of a medium cabbage sliced thinly or shred in the food processor.
    Use a food processor to coarsely grate the carrots with a grating disk or use hand grater, thinly slice the cabbage, chop the chives, spring onions and parsley and set aside.


    Prepare the dressing in medium bowl. Whisk the ingredients together until a smooth runny consistency. You want the mixture a bit runny as the noodles will absorbed most of it. If the mixture is too thick add a little bit of water and add salt and pepper to taste. Add a dash of lime juice before serving.


    4. In a large bowl combine the vegetables and the soba noodles. Pour the dressing over the vegetables and mix together to coat.

    Hi Angee. This recipe sounds so tasty! I love Asian cuisine, and eat mainly hot. However, the sesame sauce sounds very yummy, and I know the sesame oil is delicious and healthy. I will try it out and tell you how I liked it! Your website is terrific! Thank you for the fabulous recipes!

    I love anything asian/asian fusion. I make at least 3 asian inspired meals a week! This one sounds so good. I love the chew of soba noodles and sesame is one of my favorite flavors. The sauce sounds delicious! I also appreciate your use of coconut aminos! We are a gluten free household and use this often.
