Ingredients

1 Cup Mushrooms brown or mixed and chopped
1 Bunch Spinach White stems removed and chopped
medium Onions diced
2 Eggs
1 Tbsp Cornflour
1 medium Sweet potato coarsely grated
1 Tbsp Mixed spice oregano, thyme, parsley, basil
Short crust pastry Puff pastry will do.
Salt and pepper To taste

Spinach and Mushroom Pie

    Spinach and Mushroom Pie. If you love a vego pie then this one is the one. The flavours are earthy and creamy from the spinach. I can’t get enough. So good!

    Steps

    Bring 2 cups of water in a large saucepan and boil the spinach for 5 minutes. When wilted drain and wait to cool and squeeze the excess water and set aside

    In another saucepan or same one stir fry some onions and the spices for 2 minutes and then add the mushrooms and cook for another 5 minutes. Combine all the ingredients and mix evenly, season with salt and pepper. Set aside. Preheat the oven @180°C

    In a baking try lay the short crust pastry and bake in the oven for 10 minute @ 180°C. Remove from the oven and lay all the vegetable ingredients onto the pastry. You can use puff pastry instead.

    Mix the cornflour in about 20 ml of water in a small bowl and then add the eggs. Whisk together to combine and pour on top of the vegetables.

    Bake in the oven for 25 minutes @180°C. Serve warm with your favourite salad. Can be frozen for 2 days for future use.
