4 Medium Portobello Mushrooms
2 handdfuls Chard
1 Medium Capsicum
3 Large Cloves garlic
1 medium Onion
¼ Tsp Oregano
½ Tsp Ground Coriander
½ Tsp Thyme
½ Cup Cheddar Cheese Leave some for topping/ Substitute with Nutritional yeast.
2 Tbsp Nutritional Yeast

Stuffed Mushrooms


    Stuffed Mushroom make an easy appetizers or side meal . Learning to be versatile with this ingredient is really important as it is so nutrient dense.

    Stuffed Mushrooms are any easy simple nutritious meal. This recipe happed accidentally and it just turned out to be the best stuffed mushroom I have ever had. It is simple yet delicious.



    Chop all the vegetable except the mushroom. If the Portobello mushrooms have stems cut them right down to allow space for stuffing.


    Stir fry the onions and garlic in a little olive oil with the herbs for 2 minutes. Add the capsicum and the chard and stir for another 2 minutes. Do not let it cook down too much as it can turn mushy when you blend. You don't want that. Blend this mixture in the food processor for like 2 to five seconds add some grated cheese or nutritional yeast towards the end. When all combined and texturized begin to fill the mushroom with this mixture and sprinkle the yeast or cheese on the top.


    Bake in the oven @180° for 20 minutes or until browning. Serve with a salad or on their own.
