Ingredients

Adjust Servings:
2 Medium Carrots diced
150 g Sweet potato cut into chunks
1/2 Cup Red Lentils
200 g Pumpkin cut into chunks
1 Medium Onions diced
3 Cloves Garlic crushed
800 ml Vegetable Stock you can dissolve 2 cubes into the water if you don't have liquid.
2 Tsp Harissa Spice Mix or a mix of coriander. caraway, seeds, parsely, oregano, paprika, black pepper, cumin and chilli
1 Tsp Honey or more to your liking.
1 Tbsp Apple cider vinegar

    Sweet Potato Pumpkin and Lentil Soup The blend of flavours in this soup is delicious. I like the sweetness and the sour it makes this soup taste amazing. It is easy and quick to make and can be stored in the fridge for 3 to 5 days.

    Prepare the baking tray lined with the baking paper and lay the vegetable. Drizzle some olive oil, honey and season with the spice mix. Make sure all the vegetables are coated with the spices for maximum and consistent flavours.

    Meanwhile, in a saucepan saute some onions and garlic until soft. Add the lentils and the vegetable stock cover and simmer for 8 minutes on medium heat.

    When the vegetables are done add onto the lentil mix cover and simmer for 3-5 minutes to combine the flavours. Turn off the heat and blend using the immersion blender or food processor. Serve hot with croutons or your favourite bread.
