1 large handfuls Fresh Basil
100g Parmesan/Romano Grated
30g Pinenuts
4 Tbsp Lemon juice
4 Cloves Garlic
1/4 Cup Olive Oil or more to your liking
Salt to taste

    Traditional Basil Pesto is my absolute best meal. Towards end of summer when basil is plenty and about to go out of season make a big batch and freeze for later use.

    Combine all the ingredients together in a food processor and pulse for 3-5 seconds or use a blender for about the same time. You want the a little bit of texture so not quite smooth unless preferred.

    Cook some pasta of your choice according to packet instructions. When a bit cool mix in the pesto and stir to combine, add some cherry tomatoes and some grated parmesan cheese on top. Serve and enjoy.
