Adjust Servings:
¾ Cup Quinoa Cooked for 6 minutes
2 Cups Kale sauted with garlic
1 Medium Zucchini Diced
1 Cup Mushrooms Sauted
10 Truss Cherry Tomatoes Halved
1 Tbs Tahini
1 Tsp Honey
¼ cup Lemon Juice

      Prepare all the Quinoa and set asde but keep warms.

      In a saucepan quickly saute garlic and kale together for 3 minutes and set aside. Saute ginger and zucchini together for 3 minutes and set aside and keep warm. Saute mushrooms in a little oil for 3 minutes and set aside.

      In a bowl add Quinoa, kale, mushrooms, zucchini and mix together. When this is combined add the tomatoes and raw red onions and its ready to serve.

      Sauce

      In a small bowl mix together, tahini, honey and lemon juice add salt to taste. Adjust to preferred taste by adjusting the ingredients. If too thick add a little bit of water to loosen the tahini paste. Drizzle over your salad. and enjoy.
