This smoky Lentil Recipe is so delicious you will make it again and again. Serve the Smoky Lentils over Sweet Potatoes or Roast Butternut.

 

 

Lentils and Sweet potatoes Are Super Foods

One of my absolute favourite legumes are lentil especially green lentils. They so creamy and delicious I love lentils not only because they are delicious but because they are a nutrient dense. Lentils are high in protein, fibre and complex carbohydrates. This powerhouse nutrition makeup make lentils a super food for those looking to boost their fibre and protein intake. Lentils and Sweet potatoes are naturally gluten free making them a staple in my household.

What Are The Ingredients

Mushrooms adds a natural smoky earthiness to the dish.

Sun dried tomatoes adds sweetness .

Garlic adds lots of flavour and lots of nutrients.

These ingredients are so versatile I use them in almost everything I cook. Nothing is from a jar or packet all natural ingredients. This dish is smokey Savory, Gluten free, Flavorful, Plant based

Ingredients
  

  • ½ Cup Lentils I used green lentils
  • ½ Cup Crushed Tomato
  • 1 Tsp Turmeric
  • 1 Tsp Paprika
  • 1 Tsp Cumin
  • 2 Cloves Garlic
  • 1 Medium Onion
  • 250 ml Vegetable stock
  • 1 Cup Roughly Chopped Mushrooms I used brown mushrooms
  • ½ Cup Sundried tomatoes I use ones that are not soaked in oil or brine
  • ¼ Cup Cashew Nuts Pulse tomatoes and cashews See notes

Instructions
 

  • Cook your lentils until they are soft 20 minutes max and put in a bowl and set aside.
  • In the same saucepan drizzle some olive oil and fry onion until they are soft.
  • Add garlic and spices stir for ½ a minute add more oil if you need to. This will help release flavours.
  • Take the saucepan off the heat and add the tomato mixture after it has cooled down a bit and bring back to low heat to simmer for 15 minutes. *see notes
  • Add the Lentils and the rest of the stock and simmer for another 15 minutes until it is thick¼ and serve with the roast Sweet Potatoes and Tahini Sauce as shown in the picture.

Notes

*Before adding tomatoes pulse the crushed tomatoes , sun-dried tomatoes, mushrooms and cashew in the food processor.
*If you have time simmer for an extra 10 or 15 minutes for more flavour.
*Preparing Sweet Potatoes
Prepare Sweet Potatoes for 4 servings. Cut them into mouth sized cubes smaller even for kids to manage. Drizzle olive oil and season with smoky paprika and salt and use your hands to make sure all the potatoes are covered. Put in the oven for 25 minute or until soft and browning on 180 degrees celcius.
*Tahini Dressing.
Whisk together 1/4 Tahini, 1/4 cup freshly squeezed  Lemon Juice, 2 tbsp olive oil, 1/4 cup water, fined chopped 1 clove of garlic in a bowl. Salt and pepper to taste. Add some more water if you need to thin it.
