Home made Vegetable Stock
This one pot vegetable stock is so versatile and easy to make.
- Celery/celery leaves
- Tomato Paste
- Nutritional Yeast
- Salt and pepper
- Olive Oil
Saute all the available vegetables together until they are soft and add filtered water and nutritional yeast and bring to boil. Once it starts boiling reduce heat and simmer for I hr adding more water as needed.
Add spices such as dried thyme, oregano and bay leaf for extra flavour.
You can use this broth to cook quinoa
Add to stews instead of plain water for added flavour
Brussel Sprouts are ok to add to your stock in moderation too much may overpower your stock flavour
Stores in the fridge for 5 days or put in the freezer.
